Paprika Salmon with Garlic Mashed Sweet Potatoes

 For the Salmon

2-3 salmon steaks
1/4 cup canola oil
1 1/2 tsp. garlic, minced
1/2 TBLE. onion powder
1 TBLE. paprika
2-3 TBLE. thyme, parsley, or basil (mixture of all three is best!)
salt/pepper to taste

  1. Preheat over to 400 degrees Fahrenheit. Line a baking sheet with foil and lightly spray with your choice of cooking oil.
  2. Over low-medium heat, combine the canola oil, minced garlic, herbs, paprika, and onion powder. Stir for about 45 seconds, or until all combined, and then let mixture sit for about 5 minutes.
  3. Season salmon with salt, then toss with the paprika spice mixture. Place on prepared baking sheet.
  4. Bake the salmon for 15-18 minutes or until cooked all the way through. You will know the salmon is done when it flakes easily with a fork.

For the Sweet Potatoes

4 medium sized sweet potatoes, peeled and cut into cubes
3 TBLE. butter
1 TBLE. garlic, minced
2-3 TBLE. sour cream
salt/pepper to taste

  1. Boil sweet potatoes over medium-high heat until cooked thoroughly.
  2. Once drained, mash the potatoes with a fork or other mashing tool.
  3. Add the butter, garlic, sour cream, and salt/pepper.paprika salmon with mashed sweet potatoes

Funny story regarding this salmon recipe… One time I made this for my family and I took a huge bite of the salmon and my mouth was on FIRE. Being that too spicy of food can be a Crohn’s trigger for me, I decided that maybe I used a bit too much paprika. The next day when I was making dinner and got in my spice cabinet, I realized that the red spice I grabbed the night prior was cayenne pepper – NOT paprika at all. It all made a whole lot of sense after that and I don’t think I will ever grab the wrong spice for this again!

This recipe is great because the salmon and the sweet potatoes are so standard that you can swap the side dish or swap the meat and it still makes for a great meal! Another thing to do with the extra paprika seasoning for the salmon is to put carrots, green beans, or other vegetables on the baking sheet with your salmon and sprinkle with the extra seasoning.

Happy Cooking!
